Three meals I love because they’re so versatile are salad, stir-fry and soup. Basically any mixture of food is salad, hot salad is basically stir-fry, and hot salad in broth is basically soup. You can squeeze a lot of nutrition into those three meals. But it takes a lot of work to prep vegetables.

But when I’m in a hurry, or just don’t want to make a mess, I use premade food – like canned soup – and it “pimp it” as in “pimping my pizza”. What that is, we add our own toppings to a frozen pizza base.

So there’s a foot of snow on the driveway and it’s gonna be a long day I’m pimping some tomato soup. Here, I made it with sirachi, lime, parsley, butter and Parmesan whisps – just how I like it. Tomato soup for breakfast- why not?!
